Her fifties aluminum refrigerator butter dish, in which she always kept a stick of unsalted butter, could almost stand as a symbol for Julia and her influential style. If most American devotees of Julia were asked what foodstuff or dish they most associated with her, they would say "butter." Though she preached "moderation" in all things, she also enjoyed urging fat-frightened Americans to use real, not fake, foods (e.g., margarine) and to enjoy the pleasures of the table—symbolized by butter.
