Object 53 [of 66] – Gratin This is one of ten similar plats à gratin, shallow enameled baking dishes Julia kept on shelves in the cabinet next to the range. It is oval shaped and one of the largest, measuring 32 cm long x 20 cm wide x 5 cm deep. Such fireproof pans can be used for baking any number of dishes, but are especially good for gratins, those with a sprinkling of butter, bread crumbs, or grated cheese that forms a light brown crust when the dish is passed under a hot broiler.
