Caviar, prepared and salted sturgeon roe (fish eggs,) is best served with small spoons like this, made from mother-of-pearl, the shiny interior of an abalone shell. Caviar spoons aren't metal because the salts in the caviar interact with typical spoon-making metals, affecting the roe's delicate flavors.
