Object 63 [of 66] – Heart-shaped Fish scaler Julia's kitchen held a large number of fish scalers, a French heart-shaped scaler among them. The serrated edges of these tools are useful for scraping off the scales of a fish. She also used a fish knife to accomplish the same task. For some fish preparations, such as barbecuing or grilling in a fish basket, she preferred to leave the scales on because they strengthened the skin and helped hold the fish together under intense heat.
