The red binder is the daily log used by the Advanced Fresh Concepts Corporation, a sushi product distributor to supermarkets nationwide is marked as a daily log journal on the bottom right corner. The binder contains blank spreadsheets to be filled out by employees with daily cleaning, calibration, temperature, the pH, and rice cooling information.
Duties such as cleaning and temperature control are systemized through recording in the daily log, which reflects AFC’s regimented management procedures and their standards of hygiene.
