In 1841, T. A. Quevenne, chief pharmacist at the Hopital de la Charité in Paris, described a hydrometric method of determining the richness (fat content) and purity of milk. This glass hydrometer with mercury ballast is of that sort. The paper label reads in part “Lactometer for Milk. Temp. 60° F.”
